Here is a really great recipe I made this morning. Usually I include nuts and seeds into my granola, but I didn’t have any, so I added quinoa for added crunch. Chia seeds add healthy omega-3 fats, which are essential not only to general health, but also brain health. I also added maca, which is a wonderful superfood which helps increase energy, fertility, improving mood, fighting free radicals, and lowering blood pressure.
Here is the recipe for the granola:
1 cup oats
1/3 cup quinoa
1/4 cup chia seeds
1 tsp cinnamon
1 tsp coconut sugar
1 tsp maca
1 T maple syrup
1/4 cup coconut oil
Juice of half a lemon
1/2 cup frozen wild blueberries
Mix dry ingredients in a bowl. In a separate bowl, mix the wet ingredients. Add the wet ingredients to the dry and mix well.
Line a baking sheet with tin foil and evenly spread the mixture into the pan.
Bake at 350 for 15 minutes
Recipe for Lemon Blueberry Parfait
1 cup lemon flavoured yogurt
1/2 cup lemon blueberry granola
1/4 blueberries
In a mason jar, layer 1/4 cup yogurt, then 1/4 wild blueberries, a handful of granola, another 1/4 cup of yogurt and top with 1/3 cup granola.
