I’ve been dreaming of Bali lately, so I went out and bought a papaya, along with bananas, blueberries and coconut milk. I have made a smoothie bowl here, which will satisfy your need for a healthy, delicious breakfast. I also bought delicious, nourishing vegetables that just give so much energy. These meals can be made completely plant based (lunch and dinner) substituting the beef for chickpeas or tofu. I used dried herbs and garlic for flavor.

Smoothie bowl:

Papaya 1//2 c

1/2 Banana

1/2 c Blueberries

1 tbsp coconut oil

1 tsp chia seeds

1/2 c coconut milk

Been all ingredients in a blender. Add chopped banana and papaya on top.

For lunch: chickpeas and cauliflower—

1 c Chickpeas

1/2 c Cauliflower

Small amt beef

1/3 of an Onion

Olive oil

Vegetable broth

1 1/2 tsp oregano

1 garlic clove

Brown beef, add onion, cook until caramilized. Add cauliflower and chickpeas, salt and pepper, oregano, garlic, cook for a few min. Add vegetable broth to almost cover cauliflower pieces.

Cook about 10 min. Add a little olive oil.

Dinner: Beef with butternut squash, peppers and quinoa—

Beef, peppers and butternut squash

3 oz ground beef

1/3 c onion

1/2 c butternut squash, cubed

1/2 cup green, yellow and red peppers

1/2 lemon

1 cup quinoa

Boil water. Combine 2 cups water and 1 c quinoa. Cook 15 min.

In the meantime, brown beef. Add onion. When almost caramelized, Add squash. Sauté for a few minutes, add peppers. Add salt, pepper, oregano and garlic. Cook a few minutes more. Add vegetable broth to barely cover the vegetables. Cook until all vegetables are soft. Last 2 minutes add juice of half a lemon. Serve over 1 c quinoa.
