Quinoa-carrot-ginger bread

This is the perfect breakfast. coffee, carrot juice, and quinoa carrot bread. You will enjoy this fully- I slightly undercooked the bread because I like it chewy. Carrots for beta carotene, grains for b vitamins and fiber, yogurt for probiotics and calcium, and olive oil for healthy fat.

Quinoa-carrot ginger bread

1 c all purpose flour

1 c oats

1/4 c quinoa

1 tsp baking powder

1/3 c sugar

1 tsp baking soda

1 tsp cinnamon

1/2 tsp ginger

1 large carrot, grated

1/4 c plain Greek yogurt

1/4 f olive oil

Preheat oven to 350. Mix all dry ingredients. Mix all wet ingredients. Add dry ingredients to wet ingredients and mix to combine. Grease a loaf pan with olive oil. Pour batter into loaf pan, and cook for 37 minutes. Cool 10 minutes. Serve with coffee and carrot juice.
